If you have tiny brinjals, this fry will definitely makes an excellent side dish to serve along with roti, rice and dal. A prefect dish to make if you are in hurry, you can pack this fry very well in a lunch box.

Ingredients to make Whole Brinjal Fry (no onion no garlic)

  • 10 nos Tiny Brinjals
  • 1tbsp chilly powder
  • 1/2cup Coarsely grounded peanuts
  • Salt
  • oil

Steps to make Whole Brinjal Fry (no onion no garlic)

  1. Mix the chilly powder, coarse peanut powder,salt in a bowl.
  2. Take the brinjal, slit open it as four from the bottom and keep the head intact. Now stuff the spice mixture inside the slits gently, keep aside.
  3. Heat enough oil in a pan, drop the stuffed brinjals and fry in simmer until they get well cooked. Serve warm as side dish.
