Ingredients to make Jackfruit/Kathal Pakora

  • 2 cups prepped Raw Jackfruit – mashed coarsely (For instructions on how to prep the Jackfruit check tips)
  • 1 big/2 small onions – thinly sliced
  • 1/2 cup gram flour/Garbanzo Bean Flour (Besan)
  • 2 tsp salt
  • 2 tsp Kashmiri red chilli Powder
  • 1 tsp turmeric Powder
  • 1 tsp Chaat masala
  • oil to fry

How to make Jackfruit/Kathal Pakora

  1. Take the sliced Onions in a bowl and sprinkle over 1 tsp salt, chilli powder and turmeric.Keep covered for 10 minutes till the Onions ooze out their water.
  2. Add the mashed Jackfruit, the remaining 1 tsp salt and the gram flour.Mix well till thoroughly combined.
  3. Heat Oil and when sufficiently hot, drop mixture gently in the hot oil.Fry the Pakoras on medium heat till golden brown and slightly crisp.Remove on absorbent paper.
  4. Serve warm with Tomato Ketchup,Green Coriander Chutney and Sweet Tamarind Chutney.

My Tip:

Prepping the Jackfruit : Take a Raw Jackfruit which has a clear, green skin with no black markings on it(which denote rotting has started within the fruit). Apply any edible oil on your palms and take a sharp knife.Keep a smooth textured newspaper page close at hand.Cut the Jackfruit carefully into half.A white sap will ooze out which should be wiped immediately by a piece of the newspaper.Cut it longitudinally into half again and wipe off the sap.Cut into quarters and carefully remove the prickly green skin without hurting yourself.Oil your palms once a while to avoid them to go sticky.Cut the flesh into pieces and immerse in clean water to which 1 tsp salt and 1 tsp Turmeric powder has been added. Pressure cook the Jackfruit pieces till fork tender.Refrigerate after coming to room temperature.

Amritha , there s an easy way to peel jackfruit. clean it well , & cut them into a little bigger pieces. then pressure cook for just 1 or 2 two whistles. can easily remove skin & nose.
