About Baingan Aloo ki Sabzi Recipe

Baingan aloo is a simple and easy to make subtle vegetarian dish. Its perfect for vegetable lovers with a lovely combination of eggplants, potatoes and tomato. It can be had with roti and rice along with daal as a side dish.

Baingan Aloo ki Sabzi

Ingredients to make Baingan Aloo ki Sabzi

  • Brinjal / baingan - 2 medium size cut into cubes apply salt for 15 minutes and wash
  • potatoes / Aloo - 4 medium peeled cubed and washed
  • onion - 2 medium finely sliced
  • cumin seeds - 1 tsp
  • kalonji/ nigella seeds - 1/2 tsp
  • tomatoes - 2 medium chopped
  • ginger garlic paste - 1 tsp
  • coriander powder - 1 tsp
  • turmeric powder - 1/2 tsp
  • red chilli powder - 1 tsp
  • salt - to taste
  • oil

How to make Baingan Aloo ki Sabzi

  1. Heat oil in a kadhai, add the cumin seeds. Let it splutter
  2. Add onions and saute till golden brown in color
  3. Add kalonji, coriander, turmeric, red chilli powder and tomatoes alongwith 1/2 cup of water. Cook for about 10 minutes so that the masalas are cooked through and tomatoes are completely mashed.
  4. Add potatoes, mix and cook for few minutes
  5. Add brinjals and mix.
  6. Add salt and 1 cup of water and cook till all water dries up and vegetables are properly cooked
  7. Serve hot with roti/rice
