ABOUT Khichdi Cheese Balls with Green chutney RECIPE

What could be the best way to feed our child with daal khichdi in a different way...This yummy comfort food can be made at home any time and kids will love it, for sure. Inspiration for this recipe is an Italian dish named “Aransini Balls”. Arancini is stuffed rice balls that’s coated with bread crumbs and then deep fried.

Ingredients Serving: 4

  1. Rice- 1/2 cup
  2. Moong dal-1/2 cup
  3. Mustard Seeds- 1ts
  4. Cummin Seeds- 1tsp
  5. Asafoetida- a pinch
  6. Turmeric powder- 1/2 tsp
  7. Ginger garlic paste-1 tsp
  8. Green Chilies- 2 nos finely chopped
  9. Tomato-1 chopped finely
  10. Onion-1 finely chopped
  11. Butter- 2 tbsp
  12. Salt to taste
  13. Water 2 cup
  14. Coriander leaves- a handful
  15. Curry leaves- a sprigs
  16. Bread or Rusk crumbs
  17. Egg - 1 beaten nicely
  18. Maida/ Plain flour- 1 cup
  19. Mozrella Cheese- small cubes for each balls
  20. Oil for frying

Instructions

  1. Process of Making Khichdi:- Heat butter in pressure cooker, add mustard and cumin seeds allow it to splutter, add asafoetida and fry for second.
  2. Add onion, green chillies, curry leaves, ginger garlic paste and fry for 5 mins. Now add tomato and fry until tomato turns mushy.
  3. Add turmeric powder, rice and dal fry well until all masala incorporated with rice and dal.Add salt and water, cover with lid and allow it cook for 2-3 whistles
  4. Once done remove the pressure and take out the khichdi and set in plate to cool down
  5. Once khichadi is 95% cool down take small quantitiy in your hand and spread slowly with the help of little water,place one almond size cheese piece inside this and nicely roll it and make a nice balls
  6. Next coat this ball first in Maida and then in whisked egg and last in rusk or bread crumbs. Set aside until you finish making all balls
  7. Now heat oil in Kadai and fry all the balls until it turns light brown in color
  8. For Green Chutney. Take handful of mint leaves and coriander leaves, green chillies,garlic,curd ,salt and lemon. grind all this to fine paste
  9. Serve this chutney in one small bowl
  10. Now serve Khichdi Cheese balls with tomato Ketchup and green chutney
