Mutton Kheema

Ingredients to make Mutton Kheema

  • 500 gms mutton or chicken mince (mutton tastes much better)
  • 500 gms onions finely chopped
  • 6 cloves garlic + 1 inch ginger made into a paste
  • 100 gms tomato pureed
  • 100 gms curds (beaten)
  • 3 Dried Red Chillies
  • 2 inch sticks cinnamon - 2
  • 10 cloves
  • 2 pods black cardamom
  • 10 Black Peppercorns
  • 3 Star Anise
  • 1 tbsp dhania/jeera powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp hing
  • 1 tbsp sambar masala
  • Red chilli powder
  • salt to taste
  • 50 gms fresh dhania
  • 1 tbsp kasuri methi powder
  • 2 tbsp oil

How to make Mutton Kheema

  1. Brown the onions and keep aside.
  2. In a cooker put the oil, red chillies and whole spices. When they start to crackle add the browned onions, garlic ginger paste and saute for about 5 minutes. Add the powdered spices and the tomato puree.
  3. Cook until the tomato puree and the rest of the ingredients are properly mixed.
  4. Add most of the fresh dhania (about 90%) and the kasuri methi and keep cooking for another 5 minutes.
  5. Add the beaten curds and stir for another 5 minutes.
  6. Add the mince of chicken or mutton and roast well until the oil releases.
  7. Add water and close the cooker. Cook on a low heat until the mince is cooked. For mutton kheema wait for 2 whistles. (For chicken you do not need to pressure cook it)
  8. Garnish with the remaining dhania and serve with sunny side up eggs and Laddi pav or any pav.
