Ingredients to make Chicken Awadhi

  • 1 KG CHICKEN WITH BONE MEDIUM SIZED
  • WHISKED YOGURT 1/2 CUP
  • 1 TBSP CORIANDER POWDER
  • 1 TBSP CUMIN POWDER
  • 1/2 TSP TURMERIC POWDER
  • 2 TBSP RED CHILLI POWDER
  • 2 black cardamoms
  • 6 cloves
  • 2 inch cinnamon
  • 5 green cardamoms
  • 4 green chillies
  • Salt to taste
  • 3 TBSP GINGER GARLIC PASTE
  • 2 TBSP GHEE
  • WHITE OIL
  • 1/2 cup tomato puree
  • 1/2 CUP COCONUT MILK
  • A PINCH OF NUTMEG POWDER
  • GARAM MASHALA POWDER A PINCH
  • 5 TBSP MELON SEED CASHEW NUT PASTE
  • 1/2 CUP FRIED ONION PASTE
  • 1/2 TSP GREEN CARDAMOM POWDER

How to make Chicken Awadhi

  1. COMBINE THE YOGURT, CORIANDER POWDER, CUMIN POWDER, TURMERIC,SALT,SLIT GREEN CHILLIES, GINGER-GARLIC PASTE IN A BOWL AND MIX. THEN ADD CHICKEN AND KEEP IT TO MARINATE FOR AT LEAST 1 HR.
  2. HEAT GHEE AND OIL IN A PAN. ADD IN CINNAMON,GREEN AND BLACK CARDAMOM, CLOVES AND SAUTE UNTIL A SWEET AROMA COMES OUT.
  3. ADD CHICKEN WITH THE MARINADE,STIR AND COOK ON A HIGH HEAT FOR 5 MINS.
  4. ADD IN RED CHILLI POWDER AND TOMATO PUREE. MIX IT WELL AND COOK FOR 4 MINS.
  5. ADD ONION PASTE, MIX AND COOK WELL FOR 3 MINS. THEN ADD CASHEW NUT- MELON SEED PASTE, MIX WELL AND COOK FOR 3 MINS.
  6. ADD CARDAMOM POWDER, NUTMEG POWDER AND GARAM MASHALA POWDER. MIX WELL AND COOK FOR 4 MINS.
  7. ADJUST SALT AND MIX. ADD COCONUT MILK, MIX AND COOK FOR 20 MINS.
  8. SERVE IT HOT.
