About RINGAN NO ORO Recipe

This is one recipe My mother had learned from my Granny and I learned from my mother. A perfect recipe to be made in winter season where the markets are flooded with green & fresh vegetables. Aubergine is first roasted & then cooked with green garlic & spring onion along with dry spices. Tastes best when served with bajre ki roti and freshly made dahi.

Ingredients to make RINGAN NO ORO

  • 500 grams Aubergine
  • 5-6 spring onion with bulb, chopped
  • 10 green garlic with chives, chopped
  • 1 large tomato, finely chopped
  • 2 green chilli, roughly chopped
  • 2 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 1 sprig curry leaves
  • 1 teaspoon kashmiri red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • salt as per tastw

How to make RINGAN NO ORO

  1. HEAT 2 TABLESPOON OIL IN A PAN
  2. ADD CUMIN SEEDS, CURRY LEAVES & CHOPPED GREEN CHILLI
  3. ADD CHOPPED GREEN GARLIC
  4. SAUTE FOR 45 SECONDS
  5. NOW ADD THE CHOPPED SPRING ONION BULBS
  6. SAUTE UNTIL THEY TURN TRANSLUSCENT
  7. ADD TURMERIC POWDER, RED CHILLI POWDER & CORIANDER POWDER
  8. ADD GARAM MASALA POWDER & TOMATOES
  9. SAUTE THE SPICES FOR 1 MINUTE
  10. ADD 1/4 TEASPOON SALT
  11. MIX WELL. COVER THE PAN & LET THE TOMATOES COOK UNTIL MUSHY
  12. TOMATOES ARE DONE. NOW ADD THE AUBERGINE PULP
  13. MIX WELL
  14. ADD THE SPRING ONION
  15. MIX & COVER THE PAN. LET THIS COOK FOR 10 MINUTES. STIR IN BETWEEN
  16. ADJUST SALT. SWITCH OFF THE FLAME
  17. RINGAN NO ORO IS READY TO BE SERVED. SERVE WITH BAJRE KI ROTI
