ABOUT Shakarpara (Sweet Diamond Cuts) RECIPE

These are small fried cookies traditionally made mainly in Maharashtra and Gujarat and served during Diwali/Holi.

Ingredients Serving: 4

  1. Ghee - 1/2 cup
  2. Sugar-1/2 Cup
  3. Water - 1/2 cup
  4. Maida - 2 and 1/4 Cup
  5. Salt -1/8 tsp
  6. Oil - for deep frying

Instructions

  1. First melt the ghee in a kadai. In another vessel, dissolve the sugar in the water by gently heating it. Add the sweet water into the melted ghee.
  2. Let the mixture come to room temperature and add salt to it. Gradually add the flour little by little and mix it to make a smooth pliable dough. Make a 4- 5 big size balls and roll out into a thin circle.
  3. Cut out the uneven edges and then using a knife or pizza cutter, cut 1 inch wide strips. Cut the strips horizontally to get square or diamond cuts. (Here I have cut square shapes.)
  4. Meanwhile heat oil in kadai and fry the cuts till they turn golden in colour. Then let it completely cool and store it in a airtight container.

I use low calorie option oil instead of ghee. Also goes good

Instead of water milk is also a very good option
