About BEGUNI - CRISPY EGGPLANT FITTERS Recipe

Beguni is a very famous and mouth watering street food snacks from West Bengal. Its basically a dish made from egg plant, dipped into batter and deep fried in hot oil. This snack is best for rainy day and goes very well with puffed rice or Tea or Coffee with few chint of chaat masala or black salt sprikle over it.

BEGUNI - CRISPY EGGPLANT FITTERS

Ingredients to make BEGUNI - CRISPY EGGPLANT FITTERS

  • Purple Eggplant - 1
  • Vegetable oil - For deep fried
  • FOR THE BATTER :-
  • all purpose flour - 4 tablespoons
  • gram flour - 2 tablespoons
  • Rice flour - 1 tablespoon
  • Red chill powder - 1 teaspoon
  • turmeric powder - 1/2 teaspoon
  • salt to taste
  • Nigella seeds - 1 teaspoon
  • poppy seeds - 1 teaspoon.
  • water

How to make BEGUNI - CRISPY EGGPLANT FITTERS

  1. Cut the eggplant into long and thin pieces.
  2. To make the batter, add all the flours, chilli powder, salt, turmeric powder, Nigella seeds and water.
  3. Mix them very well with a spatula and make a smooth and thick batter.
  4. Heat sufficient oil in a frying pan for deep frying.
  5. Put the eggplants into the batter and coat them very well.
  6. When oil is heated, put the batter coated eggplant into the oil and fry them on medium to low heat until they became golden brown.
  7. Drain oil and place them on plate.
  8. Sprinkle some chat masala or black salt serve hot
