Cucumber and beets provide stamina and energy during the fasting season . A easy curry that could be served with any dishes of your choice .

Navaratri cucumber beets curry ( No onion , No garlic )

Ingredients to make Navaratri cucumber beets curry ( No onion , No garlic )

  • Long cucumbers 3 . Outer skin peeled and cucumber finely chopped .
  • Ripe tomatoes 3 grated into a purée
  • Small sized Beetroot 1 grated finely ( 1 tablespoon grated Beetroot )
  • Milk 120 ml
  • rock salt as taste
  • turmeric powder 1/4 teaspoon
  • red chilli powder 1 tablespoon
  • coriander powder 1/2 teaspoon
  • cumin seeds 1 teaspoon
  • coriander leaves finely chopped for garnishing .
  • water half glass
  • Sesame oil 2 tablespoons

How to make Navaratri cucumber beets curry ( No onion , No garlic )

  1. Heat 1 tablespoon sesame oil in a pan .
  2. Add cumin seeds and wait till it crackles. Add a tablespoon of grated Beetroot and start sautéing under low flame till the raw smell leaves .
  3. Add the grated tomato purée to the pan . Sauté it well for few minutes till the raw smell leaves .
  4. Add the dry powders one by one . First add turmeric powder .
  5. Red chilli powder to be added next .
  6. Now add coriander powder and rock salt .
  7. Mix well and let it cook for few seconds . Then add the chopped cucumber and sauté for two minutes .
  8. Add water to adjust the consistency of the curry .
  9. Cover the pan and allow the curry to cook for 5 minutes so that the vegetables and masalas blend together well .
  10. The curry releases oil on the top and this indicates the curry is done .
  11. At this stage , simmer the flame and add the milk to this curry . Let it cook for a minute .
  12. Add the finely chopped coriander leaves
  13. Navratri special cucumber beet curry is ready .
