About Dhaba Style Smoked Dal Recipe

Dal is one of the recipes that is made in every Indian home. Our recipe is a classic dal recipe (lentils) that are spiced together and given a smoked flavor. So if you are bored of the same old dal and want to try something new, then this recipe is for you. Dal when smoked with burning coal, brings out delicious flavors and works magic as smoking is a technique used for giving rustic flavors to a dish.

Dhaba Style Smoked Dal

Ingredients to make Dhaba Style Smoked Dal

  • For boil
  • 1/4 cup bengal gram (chana dal)
  • 1/4 cup whole green gram (moong dal)
  • 1/4 cup red lentils (masoor dal)
  • 1/4 cup yellow lentils (toovar dal)
  • 2 cup water
  • 1 tsp turmeric powder
  • 1 tsp salt
  • For fry
  • 1/2 tbsp ghee
  • 1/4 cup onion (chopped)
  • 1 tbsp ginger (chopped)
  • 1 tbsp garlic (chopped)
  • 1 tbsp green chillies (chopped)
  • 1/4 cup tomato (chopped)
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 tbsp red chilly powder
  • 1 tsp salt
  • For smoke
  • 1 live charcoal
  • 1/2 tsp ghee
  • For tadka
  • 1/2 tbsp ghee
  • 1/2 tbsp cumin seeds
  • 1/2 tbsp garlic (slivered)
  • 2 dry red chillies

How to make Dhaba Style Smoked Dal

  1. Soak all the dals for about an hour in water.
  2. Cook the dal in a pressure cooker with salt, turmeric and water.
  3. Heat a tbsp of ghee in a pan.
  4. Add the Onions, Ginger, Garlic and Green Chillies and saute for a few minutes or until the onions are light brown.
  5. Add the tomatoes and Coriander Powder, Turmeric Powder, Red Chilli Powder, Salt and saute until you smell the aromas coming through.
  6. Once the tomatoes are cooked, add the cooked dal in it.
  7. Now the final step is to add the smoked flavor and to prepare the tempering
  8. To smoke the dal heat charcoal until red hot over the gas burner (direct flame). Once the coal is red hot, place it in a heatproof bowl.
  9. Place this bowl on top of the cooked dal. Drizzle a teaspoon of ghee over the hot coal. The coal will begin to smoke almost instantly. At this stage, cover the dal pan and allow the smoke to circulate inside.
  10. After about a minute, open the dal pan and you will see the smoke effect has withered. Transfer the Smoked Dhaba Dal to a serving bowl.
  11. For the seasoning/Tempering
  12. Heat a teaspoon of ghee in a small pan.
  13. Add the cumin seeds, the slivered garlic, and red chillies.
  14. Allow the cumin to crackle for a few seconds and turn off the heat.
  15. Pour this seasoning over the Smoked Dhaba Dal.

My Tip:

Removing the lid before the smoke disappears will not let the smoky flavour settle in the dish.
