Chicken Kasha (Semi-Dry Chicken Curry from Odisha)

Ingredients to make Chicken Kasha (Semi-Dry Chicken Curry from Odisha)

  • 250 gm Chicken pieces
  • 1 large onion
  • 1 tbsp ginger garlic paste
  • tbsp tomato puree
  • 2-3 green chilis
  • 1/2 tsp coriander powder
  • 1/4 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 - 1 tsp soy sauce
  • 1/3 tsp garam masala
  • 1/2 tsp turmeric powder
  • 4 tsp oil
  • Salt to taste
  • 1/2 tsp sugar
  • Coriander leaves for garnishing

How to make Chicken Kasha (Semi-Dry Chicken Curry from Odisha)

  1. Wash the chicken pieces. Add turmeric, 1 tsp oil and salt. Mix and allow to marinate for 30 minutes.
  2. Peel and grind the onion into a coarse paste.
  3. Heat oil in a kadai. When hot, add sugar. Once it browns a bit, then add the grated onion. Fry for about 2-3 minutes.
  4. Add the ginger garlic paste and fry till raw smell goes away.
  5. Add all the powdered masalas and roast for 1 minute.
  6. Add tomato puree and cook till oil starts to separate.
  7. Add the marinated chicken. Stir on high for 2-3 minutes. Cover with a lid and cook till the chicken softens. Stir at regular intervals to avoid it getting burnt. Sprinkle some water if it gets too dry.
  8. Add the soya sauce and green chili. Toss the chicken pieces for 2 minutes on high.
  9. Remove from flame and serve hot with rotis/puris/white rice/pulao.
My Tip: Instead of 2 tbsp ginger garlic paste, I prefer using 1 inch ginger and 10 fat garlic cloves for a stronger flavour !!
