Eggless Mango Semolina Squares

Ingredients to make Eggless Mango Semolina Squares

  • 1 cup semolina
  • 1 cup mango pulp
  • 1/4 cup oil
  • 2 tbsp yogurt
  • 2 tbsp. honey
  • 2 tsp. Amaranth seeds (optional)
  • 1/2 tsp cardamom powder
  • 1/2 tsp. baking powder
  • Handful of chopped Nuts

How to make Eggless Mango Semolina Squares

  1. Preheat the oven at 190°C and grease a rectangular baking tray.
  2. Coarsely chop the nuts. I used a mix of almonds and cashew nuts in the recipe.
  3. Peel and scoop out the pulp from the mango and mash it well.
  4. Combine semolina (rawa or suji), honey, baking powder, cardamom powder (elaichi), chopped nuts in a large bowl.
  5. Take another bowl and pour oil, yogurt and mango pulp in it and combine well.
  6. Add semolina mixture into the bowl of wet ingredients and keep folding the batter in with a spatula.
  7. Pour the batter in the greased baking tray, sprinkle amaranth seeds (chawli) over the top and bake it for 20-25 minutes or till the top turns light brown in colour.
  8. Take out the tray from the oven and let it cool completely before slicing the Mango semolina squares.
My Tip: Use normal white sugar or palm sugar if you don’t have honey.

its type of arabic sweet bosbousa they ll make it with sugar but this version i really like it with real sweet very healthy version
