DRY ACHARI CHICKEN

Ingredients to make DRY ACHARI CHICKEN

  • chicken(boneless & small piece)-500gm, Onion-1 big cut into slices,Ginger & Garlic paste- 2tbs ,Green chili- 5-6 piecs,Mustard Oil- 4-5 tbs,Yogurt- 50gm
  • Turmeric powder-1tbs,red chili powder- 2tsp,coriander powder-1 tbs,Cumin powder-1 tbs ,Achari Mashala- 2tbs hip full ,Any tangy pickle- 1tbs
  • Bengali panchforon- 1tsp,Salt- as per taste,sugar- 1tbs,Lime juice- half lemon

How to make DRY ACHARI CHICKEN

  1. Wash the chicken & marinate it with salt and lime juice & keep it aside for atleast 30min ,, Now take a karai and add oil to it, allow it to warm ,, Add panchforn stir it ,, Now add onion fry a little ,,
  2. Add ginger& garlic paste & silted green chili..stir it ,, Add all the spices & salt including achari mashala and keep string ,, Now add chicken again stir until the oil get separated,, Now add yogurt mix it ,,
  3. Cover it for 5-6 min when chicken gets perfectly cooked open the lid mix it again,, On a high flame stir it when the chicken gets dry add pickle and sugar mix it,, wait for a min before turning the gas off,,
  4. If you want more tanginess you can add half a tsp of vinegar or lime juice while cooking the chicken ..

My Tip:

For making this dish you will require achari mashala ,to make this you need 1) Turmeric powder-1 tbs 2) Dry red chili powder-1 tbs 3) Garam mashala powder-1 tbs 4) Fenugreek seeds- 1 tbs 5) Aamchur powder-1 tbs 6) Salt-1tbs 7) Coriander seeds-2 tbs 8) Cumin seeds-2 tbs 9) kalongi Seeds-2 tbs 10) Fennel Seeds- 4 tbs 11) Mustard Seed-2 tbs Method:- in a mixing jar add ingredients no (1-6) and in a dry pan add remaining ingredients. Dry roast them on a medium flame, then make a smooth powder of it. Mix them with the powder ingredients of that jar. Your achari mashala is ready. Store it in a air tight container and use it for long time… 
