Coconut milk Red chilli Prawn biryani

Ingredients to make Coconut milk Red chilli Prawn biryani

  • Prawns cleaned , deveined 1 kg.
  • Red chillies 4
  • garlic cloves 12 chopped
  • Ginger garlic paste 1 teaspoon
  • bay leaves 3
  • star anise 3
  • Stone flower 2 crushed
  • mace crushed 2
  • cinnamon sticks 2 long
  • cloves 5
  • cardamom 4
  • Dried hibiscus crushed 2
  • oil 5 tablespoons
  • ghee 2 tablespoons
  • onions big sized sliced 2
  • tomatoes small sized ripe 2 roughly chopped
  • mint leaves 1/2 bunch
  • curry leaves 12
  • salt 3 teaspoons
  • turmeric powder 1/2 teaspoon
  • coriander powder 1/2 teaspoon
  • Biryani masala 1.5 teaspoon
  • Basmati rice 4 cups soaked for 20 minutes
  • coconut milk extracted from full coconut 4 cups

How to make Coconut milk Red chilli Prawn biryani

  1. Take the biryani whole spices . Bay leaves, mace, cinnamon, cloves, stone flower,star anise,elaichi
  2. Heat 5 tablespoons oil . 2 tablespoons ghee .Fry whole spices,4 red chillies .Aroma is released .
  3. Add 2 sliced onions . Sauté till brown.
  4. Add finely chopped 12 garlic cloves . Sauté all together.
  5. Add 1 teaspoon ginger garlic paste . Saute for few seconds.
  6. Add 1/2 bunch mint leaves . Sauté for few minutes.
  7. Add 2 small ripe tomatoes roughly chopped . Sauté till mushy and soft . Add salt .
  8. Turmeric powder 1/2 teaspoon,coriander powder 1/2 teaspoon. Biryani masala 1 tablespoon.Mix all .
  9. Add 1 kg cleaned deveined prawns . Cover the pot and cook for 5 minutes . Don’t overcook prawns .
  10. Add curry leaves . Sauté . Add the soaked 4 cups basmati rice . Fry for two minutes with masala .
  11. Extract thick coconut milk from 1 full coconut . Add 4 cups coconut milk to the rice. Set to cook .
  12. Adjust coconut milk / water as per the rice quality . Cover the pot and cook for 10 to 15 minutes .
  13. Coconut milk Prawn biryani is ready . Serve with raita .

My Tip:

Increase or reduce chillies as per your taste . Rice : coconut milk is 1:1 ratio . Adjust as per the rice you use . Do t overcook prawns . I cooked in rice cooker and as soon as it falls to warm mode , I fluffed the rice using a fork .
