ABOUT Basil Pesto Chicken With Vegetables And Herb Brown Rice RECIPE

Pesto Chicken is baked chicken preparation with basil pesto being the main ingredient. I learnt this recipe from one of friends. This preparation involves marinating the chicken pieces with the pesto and few other condiments. Then it is baked with some tomatoes, other vegetables like asparagus or bell peppers. generally Parmesan cheese is used on the top, but I skipped it in my recipe because of my taste preferences. One may add it to the recipe.

Ingredients Serving: 2

  1. Chicken leg pieces - 3-4
  2. Basil leaves - 8-10
  3. Jalapenos -2-3
  4. Pine nuts or almonds - A handful
  5. Garlic pods - 3-4
  6. Olive oil - 3-4 tablespoons
  7. Cherry tomatoes - A handful
  8. Green Bell pepper - 1, thinly sliced
  9. Onion - 2-3, thinly sliced
  10. Crushed black pepper
  11. Salt to taste
  12. Dried oregano herb

Instructions

  1. Grind together basil leaves, garlic pods, pine nuts and Jalapenos. While grinding, add olive oil generously and make a thick paste.
  2. Marinate the chicken pieces with Pesto, crushed black pepper and dried oregano, keep it for 2-3 hours.
  3. Transfer the chicken pieces with the marinade into a baking container, add salt to taste, add the cherry tomatoes, sliced green bell pepper and sliced onion.
  4. Preheat oven at 375 F for 10 minutes then bake the chicken for 20-25 minutes or till the chicken is cooked and is nicely charred.
  5. Herb Stir Fried Brown Rice - Cook the brown rice and drain its water. Add little butter or olive oil and chopped cilantro and lime juice. In a wok add little white oil and heat it, add some chopped spring onion and saute it. Add oregano, stir and add rice. Pan fry and serve along with the pesto chicken.
